Description

Learn how to make Authentic Irish Potato Farls with this easy recipe. Discover the delicious taste of homemade potato farls today!

Ingredients

Scale
  • 1 pound (450g) starchy potatoes
  • 2 tablespoons (30g) butter
  • 1/2 cup (60g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 tablespoon (15ml) milk

Instructions

  1. Step 1: Prepare the Potatoes Peel the potatoes and cut into even 1-inch chunks. Place in a pot of cold, salted water and bring to a boil. Reduce to a simmer and cook for 15-20 minutes until the potatoes are completely tender when pierced with a fork. Drain thoroughly in a colander, then return to the hot pot and shake gently for 1-2 minutes to dry out excess moisture.
  2. Step 2: Mash and Mix While the potatoes are still hot, add the butter and mash until completely smooth with no lumps. This is essential for the perfect texture of your Authentic Irish Potato Farls. Allow the mixture to cool slightly (about 5 minutes) before adding the flour, salt, and baking powder if using. Fold everything together with a wooden spoon until it forms a soft dough. If the mixture seems too dry, add the tablespoon of milk, but this is rarely necessary with properly cooked potatoes.
  3. Step 3: Form the Dough Turn the dough onto a floured surface and knead very gently just 3-4 times until smooth. The dough should be soft but not sticky. Using a floured rolling pin, roll the dough into a circle about 8 inches in diameter and roughly 1/4 inch thick. For traditional potato farls, cut the circle into quarters (farls) with a floured knife.
  4. Step 4: Cook the Farls Heat a large, heavy skillet or griddle over medium heat. Add a small knob of butter and allow it to melt and begin to foam slightly. Place the farls in the pan, being careful not to overcrowd them. Cook for 3-4 minutes on each side until they develop a beautiful golden-brown crust and are cooked through. You’ll know they’re ready to flip when the edges start to look dry.
  5. Step 5: Serve Transfer the Irish potato farls to a warm plate and cover with a clean kitchen towel to keep them warm if cooking in batches. Serve immediately for the best texture and flavor, ideally with a generous pat of butter melting over the top.

Fresh ingredients will always yield the best flavor results.
