  • 8 ounces (225g) breakfast sausage or bacon, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 4 large eggs
  • 1 cup (113g) shredded cheddar cheese
  • 2 tablespoons fresh chives or green onions, chopped

Instructions

  1. Step 1: Prepare Your Skillet Heat a 12-inch cast iron skillet over medium-high heat. Add the oil or bacon grease and allow it to get shimmering hot but not smoking.
