  • 1 pound andouille sausage, sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced fire-roasted tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 12 ounces penne pasta
  • 4 ounces cream cheese, cubed and softened
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Step 1: Heat the olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove sausage with a slotted spoon and set aside.
  2. Step 2: Add the onion and bell pepper to the same skillet. Sauté until softened, about 5 minutes. Stir in garlic and cook until fragrant, 1 minute more.
  3. Step 3: Pour in the diced tomatoes, chicken broth, heavy cream, and Cajun seasoning. Stir to combine. Bring to a boil.
  4. Step 4: Add the uncooked pasta to the skillet. Reduce the heat to medium-low, cover, and simmer until the pasta is al dente, about 12-15 minutes.
  5. Step 5: Uncover and stir in the cream cheese and Parmesan until melted and the sauce is creamy. Add the cooked sausage back to the skillet and stir to combine.
