Ingredients
Scale
- 1 lb (454g) ground turkey (93% lean)
- 2 cups (60g) fresh spinach, finely chopped
- 1/4 cup (25g) Parmesan cheese, freshly grated
- 1/2 cup (55g) breadcrumbs (regular or panko)
- 1 large egg
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
- 2 tablespoons butter
- 1 small onion, finely diced (about 1/2 cup)
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- 1/2 teaspoon Italian seasoning
- 1/4 cup (25g) Parmesan cheese
- Salt and pepper to taste
Instructions
- Step 1: Prepare the Meatball Mixture In a large mixing bowl, combine the ground turkey, chopped spinach, grated Parmesan, breadcrumbs, egg, minced garlic, dried oregano, salt, and pepper. Use clean hands to gently mix, being careful not to overwork. Refrigerate for 15 minutes to meld flavors and make shaping easier.
- Step 2: Form and Cook the Meatballs Remove mixture from the refrigerator. Scoop 2 tablespoons and roll into balls. Heat olive oil in a skillet, brown meatballs on all sides until nearly cooked through. Set aside.
- Step 3: Create the Creamy Sauce In the same skillet, melt butter and cook onion until translucent. Add garlic, then stir in flour to make a roux. Whisk in chicken broth and cream, simmer with Italian seasoning.
- Step 4: Finish the Dish Once sauce thickens, add Parmesan, salt, and pepper. Return meatballs to the skillet, simmer covered until fully cooked through. Serve garnished with Parmesan and fresh herbs.
