- 3 packages dried ramen noodles
- 3 tablespoons vegetable or sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, sliced
- 1 cup mixed vegetables (carrots, bell peppers, snap peas)
- For the sauce: ¼ cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon rice vinegar, 1 tablespoon sriracha or chili garlic sauce, 1 tablespoon sesame oil, 2 teaspoons cornstarch
- Optional toppings: Soft-boiled egg, Sliced nori sheets, Sesame seeds, Fresh cilantro
Instructions
- Step 1: Prepare the Sauce In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sriracha, sesame oil, and cornstarch until completely smooth with no lumps. Set aside while you prepare the other components.
- Step 2: Cook the Noodles Bring a large pot of water to a rolling boil. Add the ramen noodles and cook for 1-2 minutes less than package instructions suggest. Drain immediately and rinse briefly under cold water to stop the cooking process.
- Step 3: Sauté the Aromatics Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic, grated ginger, and the white parts of green onions. Stir continuously for about 30-45 seconds until fragrant.
- Step 4: Cook the Vegetables Add mixed vegetables to the pan and stir-fry for 2-3 minutes until bright in color but still crisp-tender.
- Step 5: Combine and Finish Whisk the sauce again and pour into the pan with the vegetables. Let it thicken for about 30 seconds, then add the drained noodles. Toss to coat, then cook for another 1-2 minutes.
- Step 6: Garnish and Serve Transfer the noodles to serving bowls, top with green onions, sesame seeds, and optional toppings. Serve hot and enjoy!
