  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon (15ml) fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Step 1: Pat the steak pieces completely dry with paper towels. Season generously with salt and pepper, tossing to ensure even coverage. Heat a large cast-iron skillet over high heat until it’s smoking hot. Add 1 tablespoon of olive oil and 1 tablespoon of butter. When the butter has melted and begins to foam, carefully add half the steak pieces, arranging them in a single layer with space between each piece.
  2. Step 2: Let the steak bites sear undisturbed for 1-2 minutes until deeply browned on one side. Quickly flip each piece and sear for an additional 1-2 minutes for medium-rare. Transfer to a plate and repeat with the remaining steak pieces, adding a touch more oil if needed.
  3. Step 3: Reduce heat to medium-low and add the remaining 3 tablespoons of butter to the same skillet. Once melted, add the minced garlic, rosemary, and thyme. Cook for 30-45 seconds until fragrant but not browned, stirring constantly to prevent burning. Return all the steak bites to the skillet, including any accumulated juices. Add the soy sauce and toss everything together, allowing the meat to cook for another 30 seconds as it gets coated in the garlic butter sauce.
