Ingredients

  • 1/2 pound rigatoni pasta
  • 1 pound chicken (cut into bite size pieces)
  • 24 oz marinara sauce (keep jar to fill half way with water)
  • 2 bell peppers (cut into large pieces)
  • 1 yellow onion (sliced)
  • 3/4 cup half and half or heavy cream
  • 1/2 cup parmesan cheese
  • Salt, pepper, garlic powder to taste
  • 1 tablespoon olive oil
  • 23 tablespoons fresh basil
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Step 1- Sauté the Chicken
    ● Turn the Instant Pot to Sauté mode and add olive oil.
    ● Once the display reads HOT, add the chicken pieces.
    ● Sprinkle with salt, pepper, and garlic powder. Let cook for 2-3 minutes until the chicken browns on one side.
    ● Stir occasionally to prevent sticking, then hit Cancel.
  2. Step 2- Add Vegetables and Pasta
    ● Layer the sliced peppers and onions on top of the chicken.
    ● Add the pasta and pour in the marinara sauce.
    ● Fill the empty jar halfway with water (about 1 cup) and add to the pot.
    ● Push any noodles that stick above the sauce back into the liquid.
  3. Step 3– Pressure Cook
    ● Close the lid of the Instant Pot and set the valve to Sealed.
    ● Use the Manual function and set the timer to 5 minutes.
    ● Once cooking is complete, perform a quick release.
  4. Step 4– Finish the Dish
    ● Stir in half-and-half and Parmesan cheese to evenly distribute.
    ● Adjust seasonings to taste.
    ● Add fresh basil and serve immediately.
