Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 2 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt, to taste
  • ¼ tsp crushed red pepper flakes (optional)
  • 6 cups chicken or vegetable broth
  • ¾ cup whole wheat orzo
  • 2 cups fresh spinach or kale
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, optional for topping

Instructions

  1. Step 1: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage and cook until browned, breaking it apart. Drain excess grease if needed.
  2. Step 2: Add onion, carrots, and celery. Sauté 5–7 minutes until softened.
  3. Step 3: Stir in garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook 1 minute until fragrant.
  4. Step 4: Add diced tomatoes and broth. Stir to deglaze the pot and bring to a boil.
  5. Step 5: Stir in orzo and cook for 10–12 minutes until pasta is tender.
  6. Step 6: Add spinach or kale in the last 2 minutes of cooking. Stir to wilt.
  7. Step 7: Taste and adjust seasoning. Ladle into bowls and garnish with parsley and parmesan.
