- 1 tbsp olive oil
- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 yellow onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 2 tsp Italian seasoning
- ½ tsp black pepper
- Salt, to taste
- ¼ tsp crushed red pepper flakes (optional)
- 6 cups chicken or vegetable broth
- ¾ cup whole wheat orzo
- 2 cups fresh spinach or kale
- Fresh parsley, chopped (for garnish)
- Parmesan cheese, optional for topping
Instructions
- Step 1: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage and cook until browned, breaking it apart. Drain excess grease if needed.
- Step 2: Add onion, carrots, and celery. Sauté 5–7 minutes until softened.
- Step 3: Stir in garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook 1 minute until fragrant.
- Step 4: Add diced tomatoes and broth. Stir to deglaze the pot and bring to a boil.
- Step 5: Stir in orzo and cook for 10–12 minutes until pasta is tender.
- Step 6: Add spinach or kale in the last 2 minutes of cooking. Stir to wilt.
- Step 7: Taste and adjust seasoning. Ladle into bowls and garnish with parsley and parmesan.
