  • 1/4 cup (25g) breadcrumbs, preferably panko
  • 1 large egg, lightly beaten
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1/2 medium onion, very finely diced (about 1/4 cup)
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon (5g) Dijon mustard
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) black pepper
  • 1/2 teaspoon (2g) dried oregano
  • 1/4 teaspoon (1g) paprika

Instructions

  1. Step 1: Combine the ground turkey mixture In a large mixing bowl, combine the ground turkey, breadcrumbs, beaten egg, olive oil, minced garlic, diced onion, Worcestershire sauce, Dijon mustard, salt, pepper, oregano, and paprika. Mix gently with clean hands or a fork until just combined – avoid overworking the mixture to keep the burgers tender.
  2. Step 2: Form the turkey patties Divide the mixture into four equal portions (about 6 ounces or 170g each). Gently form each portion into a patty about 4 inches in diameter and 3/4 inch thick. Press your thumb into the center of each patty to create a shallow dimple. This prevents the burgers from bulging in the middle during cooking.
  3. Step 3: Rest the patties For best results, place the formed patties on a plate, cover with plastic wrap, and refrigerate for 20-30 minutes. This resting period helps the burgers hold their shape during cooking and allows the flavors to meld beautifully.
  4. Step 4: Cook the turkey burgers Heat a cast-iron skillet or grill pan over medium heat. Add 1 tablespoon of oil to the pan, or lightly oil the grill grates if using a grill. Once hot, add the turkey burger patties and cook for 4-5 minutes on the first side until a nice crust forms.

Step 5: Finish cooking and add cheese Flip the patties carefully with a spatula and cook for another 4-5 minutes on the second side, or until the internal temperature reaches 165°F (74°C) when tested with an instant-read thermometer.
