  • 3 tablespoons (45ml) extra virgin olive oil, divided
  • 1 medium red onion, thinly sliced (about 1 cup/160g)
  • 3 cloves garlic, minced (about 1 tablespoon/9g)
  • 1 red bell pepper, sliced into thin strips (about 1 cup/150g)
  • 1 yellow bell pepper, sliced into thin strips (about 1 cup/150g)
  • 2 medium tomatoes, diced (about 1½ cups/300g)
  • ½ cup (75g) kalamata olives, pitted and halved
  • 2 teaspoons (6g) dried oregano
  • 1 teaspoon (3g) ground cumin
  • ½ teaspoon (2g) cinnamon
  • 2 tablespoons (30ml) fresh lemon juice
  • ¼ cup (15g) fresh parsley, chopped
  • ½ cup (75g) crumbled feta cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Step 1: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering. Add the ground beef, breaking it apart with a wooden spoon. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Cook undisturbed for 2-3 minutes to develop a nice brown crust, then continue cooking while breaking up the meat until no longer pink, about 5-6 minutes total. Transfer to a plate lined with paper towels to drain excess fat.
  2. Step 2: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced red onion and cook until softened and slightly translucent, about 3-4 minutes. Add the minced garlic and cook until fragrant, about 30 seconds, stirring constantly to prevent burning.
  3. Step 3: Add the red and yellow bell pepper strips to the skillet. Cook for 3-4 minutes until they begin to soften but still maintain some crispness. This texture contrast is essential for an authentic Mediterranean Ground Beef Stir-Fry.
  4. Step 4: Return the browned beef to the pan. Sprinkle the dried oregano, cumin, and cinnamon over the mixture and stir to coat evenly. Allow the spices to bloom in the heat for 30 seconds, releasing their aromatic oils.
