Description

Ingredients

  • 1/2 tablespoon olive oil
  • 2 cups spinach leaves
  • A pinch of salt
  • 4 slices bread
  • 2 tablespoons butter, softened at room temperature
  • 68 pieces sun-dried tomatoes, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup shredded cheddar cheese
  • A pinch of oregano
  • A pinch of crushed chili flakes
  • Honey, optional for serving

Instructions

  1. Step 1 – Heat olive oil in a non-stick pan over medium heat. Add the spinach and sauté for 5–6 minutes until wilted. Sprinkle with salt, stir, transfer to a plate, and wipe the pan clean with a paper towel.
  2. Step 2 – Spread butter on one side of each bread slice. Place two slices of bread in the pan, butter side down.
  3. Step 3 – Add chopped sun-dried tomatoes to each slice and press lightly. Top with half of the feta, half of the cheddar, the cooked spinach, then the remaining feta and cheddar. Sprinkle with oregano and chili flakes.
  4. Step 4 – Place the remaining bread slices on top, butter side up. Cook over medium heat for about 5 minutes until the bottom is golden. Flip carefully and cook the other side for another 5 minutes until toasted and the cheese is melted.
  5. Step 5 – Sprinkle with thyme or oregano and red pepper flakes. Optionally drizzle with honey and serve immediately.
