  • 2 large eggs
  • 2 cups sour cream
  • 1/2 cup grated Parmesan cheese

  • 4 cups shredded Monterey Jack cheese
  • 1 (10-ounce) package frozen chopped spinach, thawed and well-drained
  • 2 (2.8-ounce) cans French-fried onions, divided

Instructions

  1. Step 1: Preheat the oven to 350 degrees Fahrenheit. Grease a 9×13-inch baking dish and set it aside.
  2. Step 2: Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain and set aside, allowing it to cool slightly.
  3. Step 3: In a large mixing bowl, whisk the eggs until smooth. Stir in the sour cream, Parmesan, and minced garlic until well combined.
  4. Step 4: Add the slightly cooled spaghetti to the egg mixture, tossing to coat thoroughly. Gently stir in the shredded Monterey Jack cheese, chopped spinach, and 1 can of French-fried onions. Mix until evenly distributed.
  5. Step 5: Transfer the spaghetti mixture to the prepared baking dish, spreading it evenly. Cover with aluminum foil.

  7. Step 7: Remove the dish from the oven. Uncover and sprinkle the remaining can of French-fried onions over the top. Return the casserole to the oven. Bake uncovered for an additional 5 minutes or until the onions are golden and crisp.
