- 3 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon Italian seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes (optional for heat)
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)

- Step 1: Prepare Your Ingredients Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper. Slice the chicken sausage into 1-inch pieces. Cut the bell peppers, zucchini, yellow squash, and red onion into 1-inch chunks.
- Step 2: Season Everything Perfectly In a large mixing bowl, combine the sliced vegetables and sausage. Drizzle with olive oil and sprinkle with minced garlic, Italian seasoning, smoked paprika, salt, pepper, and red pepper flakes if desired. Toss everything together until evenly coated.
