- 1 pound ground mia sausage
- 1/2 cup diced onion
- 2 teaspoons minced garlic
- 2 tablespoons flour
- 2 tablespoons tomato paste
- 8 cups chicken broth
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1/2 cup sun-dried tomatoes, drained and chopped
- 3/4 cup dry orzo pasta
- 1 cup heavy cream
- 3 cups baby spinach
- 3/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes, for garnish (optional)
Instructions
- Step 1 – Brown sausage and onions in a pot over medium-high heat, breaking up the sausage as it cooks. Add garlic and stir for 1 minute.
- Step 2 – Mix in flour and tomato paste, stirring quickly to avoid lumps and scraping the bottom of the pan well.
- Step 3 – Pour in broth, spices, sun-dried tomatoes, and orzo. Simmer for 10–13 minutes until the orzo is tender but not mushy.
- Step 4 – Add cream, spinach, and parmesan. Stir until the spinach wilts and the cheese melts. Season with salt and pepper to finish.
