  • 3 cups (450g) frozen shredded hash browns, thawed
  • 1 red bell pepper, diced (about 1 cup)
  • 1 green bell pepper, diced (about 1 cup)
  • 1 medium onion, finely chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 2 cups (225g) shredded Mexican cheese blend, divided
  • 1 can (4oz/113g) diced green chilies
  • 1/4 cup fresh cilantro, chopped, plus more for garnish
  • 1 tablespoon southwest seasoning blend
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Step 1: Prepare Your Ingredients Preheat your oven to 350°F (175°C) and generously grease a 9×13-inch baking dish. In a large skillet over medium heat, cook the chorizo until browned and cooked through, about 7-8 minutes, breaking it into crumbles as it cooks. Use a slotted spoon to transfer the chorizo to a paper towel-lined plate to drain excess grease.
  2. Step 2: Sauté the Vegetables In the same skillet with about 1 tablespoon of the chorizo drippings, add the diced onions and bell peppers. Sauté until they begin to soften, about 5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Remove from heat and stir in the drained chorizo.
  3. Step 3: Create the Egg Mixture In a large bowl, whisk together the eggs, milk, southwest seasoning, salt, and pepper until well combined. The mixture should be evenly colored with no streaks of egg white visible. This thorough mixing ensures your Southwest Breakfast Casserole has a consistent, custard-like texture throughout.
